Corned Beef, Irish Potatoes, and a well-poured Guinness.
The girls will wear their green and I'll wear my W.B. Yates shirt for the day.
I have a great recipe for irish mashed potatoes (Colcannon) where you stew the cabbage and mix it in with the mash -- really good!
3 lbs Potatoes
1 small cabbage
1 cup milk
4 tbsp butter (approx)
Salt and pepper to taste
1. Boil potatoes in pot for approx. 15 minutes with lid on.
2. Strain 2/3 of the water out, replace lid, continue to steam potatoes under gentle heat until fully cooked.
3. Finely chop cabbage across grain, put in second pot of gently boiling water -- cook until soft.
4. Drain cabbage and season to taste (salt and pepper)
5. When potatoes are done, add the milk and butter and mash 'em up. (Some people say you should bring the milk to a boil first, then add it to the cooked potatoes.)
6. When potatoes are getting fluffy, stir in the cabbage. At this point, take another taste and season again if you need to.
7. Serve immediately!! Melts in your mouth and tastes brilliant.
Remember, it's never too early to start planning for Halloween.
